My husband and I love trying new recipes...especially ones that will go easy on our budget. Lately it seems like we have been stuck in a rut when it comes to dinner time and we just rotate a handful of recipes. I would love to try some new things for dinner, any suggestions?
* Before you leave for work in the morning, put a few chicken breasts in a zip-top bag and fill the bag with marinade. Then when you or your husband get home from work in the evening, bake the chicken breasts at 350 for an hour. Serve with some salad and a baked potato/other veggies.
* Pasta with a jar sauce is quick and easy. Dress up the sauce a little by adding in some chopped veggies like onions or peppers, as well as a little garlic. I also add sugar to sweeten it a bit. Serve with salad and garlic bread.
* Do you have a crockpot? These can be so convenient for workdays. You can put the food in there in the morning and cook it on low all day. This is great for things like chili and homemade sloppy joes. You can even mix the ingredients the previous evening and refrigerate, and then just put them in the crockpot the next morning. There are thousands of easy crockpot recipes on the Internet. And the crockpot is very forgiving -- it's hard to mess up a recipe in it!
Times are really getting tough all around the country! With the price of gas in my area about 50 cents higher than the national average though, I'm finding myself having to revert to my "I-don't-wanna-cook-tonight" meals more and more. Besides, they're usually cheap, quick and easy.
My husband's favorite, which he dubbed "goulash" (sp?), is good because it consists of things I always have in my kitchen. Here goes:
(Bear with me, I am adverse to using measurements in cooking, probably just ADD .. )
Brown about a pound of ground beef
Add (to taste):
Garlic salt
Minced onions
Taragon (Basil works really good here too)
Chili Powder (or for a real kick, a couple dashes of Dave's Ultimate Insanity Sauce)
Drain grease and add in 3/4 c of peas or corn
Simmer for about 10 minutes
I usually use frozen veggies because they are usually than fresh and taste just as good (if cooked right). Serve on brown rice or with mashed potatoes.
Another yummy add in, is some italian sausage, browned with the meat. My husband's great uncle makes an enormous amount about 3-4 times a year, so we always have about 10-15 lbs in the freezer. So good!
