Thanks to the beautiful weather this year, the vegetables in my mother's garden are rapidly growing and soon will be ready to pick. One of my favorite things about summer is being able to enjoy the taste of fresh garden vegetables in some of my favorite recipes. Below are a few of my favorite summer recipes that only cost a few cents to make because most of the ingredients come straight from the garden and are combined with ingredients we usually have on hand. Simply combine all the ingredients in each recipe, chill and enjoy!
Polish Cucumber Salad (Miseria)
1 large cucumber; peeled
1 tbsp. fresh dill; chopped
1/2 cup sour cream
1 tsp. sugar
2 tsp. white vinegar
Salt to taste
Easy Fresh Garden Salsa
2 large Tomatoes; seeded & chopped
1 Serrano Chile pepper; seeded & chopped
1/3 cup chopped green onions
2 tbsp. chopped fresh cilantro
2 tbsp. lime juice
1/4 tsp. salt
Greek Tomato & Cucumber Salad
4 tomatoes, cut into eighths
1 cucumber, peeled and thinly sliced
1 medium red onion, chopped
1/4 cup olive oil
1 tsp. oregano
1 tsp. garlic powder
Vinegar to taste
Salt & pepper to taste
